About me
I'm Marko, programmer by trade and baker by obsession.
My story with bread began in France while hitchhiking and earning a bed and a meal by helping in bakeries and restaurants. Slowly, the story turned into a messy love story, and like all my messy love stories, it ended up dissected and analyzed to the smallest detail.
4 years, 18 books, 500 loaves, and 4,000 data points later, a statistical model was born, one that finally made sense of the beautiful chaos that is sourdough breadmaking.
What started as a restless struggle for perfection has since become something calm and restorative — a quiet, structured antidote to the modern, hectic pace of life.
Today, that model has become a method. Through Marko's Bread Lab, I help bakeries, restaurants, and hobbyists bake the best sourdough bread possible, every time.
